Indian cuisine has many different foods that are full of flavor, and one popular snack is the onion samosa. An onion samosa is a small, crispy pastry filled with a spicy and flavorful onion mixture. Unlike some samosas that contain potatoes or meat, onion samosas mainly use onions and spices for their filling. They are often eaten as an evening snack, served at celebrations, or enjoyed with a cup of tea. Onion samosas are especially delicious when they are hot and crispy and are served with chutney.
Before beginning, it is important to collect all of the ingredients and equipment needed for the recipe. For about 12 onion samosas, you can use approximately 3 medium onions, 1 cup of thin sev or vermicelli, 1 teaspoon of chili powder, ½ teaspoon of cumin powder, ½ teaspoon of garam masala, ¼ teaspoon of turmeric powder, ½ teaspoon of salt, 2 tablespoons of chopped cilantro, and about 12 samosa wrappers. You will also need a small amount of water or flour paste to seal the wrappers and enough cooking oil for frying. You will need a mixing bowl, a cutting board, a knife, a spoon, a frying pan, and a slotted spoon.
The first step is preparing the onion filling. Peel the onions and cut them into very thin slices or small pieces. Place the onions into a large mixing bowl and add the chili powder, cumin powder, garam masala, turmeric, and salt. Add the chopped cilantro and mix everything together thoroughly. If you are using sev or vermicelli, add it to the mixture as well. The spices give the onions a strong and delicious flavor, while the sev can help give the filling a little extra crunch. It is important to taste the mixture only with clean utensils and adjust the seasoning if necessary.
Next, the onion mixture should be allowed to sit for a short time so the flavors can combine. Unlike a filling that needs to be completely cooked before being placed inside the wrapper, some onion samosa fillings can be prepared mostly from raw ingredients because the filling cooks while the samosa is fried. If you prefer softer onions, you can lightly cook them in a pan first and allow them to cool before filling the wrappers. Either way, the filling should not be extremely wet because too much moisture can make the samosa wrapper difficult to seal and can cause it to become less crispy.
After preparing the filling, it is time to shape the samosa wrappers. Take one samosa wrapper and fold it into a cone shape. Put about 1 to 1½ tablespoons of the onion filling into the cone. Do not put too much filling inside because the wrapper might tear or open while cooking. Fold the remaining part of the wrapper over the filling to close the samosa. Use a little water or flour paste along the edge to seal it. Press the edges together firmly so the filling stays inside. Continue this process until all of the filling has been used.
Once all of the samosas are shaped, they are ready to be cooked. Traditionally, onion samosas are deep-fried in hot cooking oil until their wrappers become golden brown and crispy. This is an important step where an adult should help because hot oil can cause serious burns. The oil should be heated carefully, and the samosas should be placed into it without dropping them from a height. Fry only a few samosas at a time so the pan does not become overcrowded. Cook them until the outside looks crisp and golden.
When the samosas are finished frying, carefully remove them from the oil with a slotted spoon. Place them on a plate covered with paper towels or on a cooling rack so excess oil can drain away. Allow them to cool for several minutes before eating because the filling and wrapper can be very hot. A properly cooked onion samosa should have a crunchy outside and a flavorful onion filling inside. The combination of crispy pastry, onions, and spices makes the snack especially tasty.
While the samosas are cooling, you can prepare something to serve with them. Onion samosas taste great with different types of chutney. Mint-cilantro chutney gives the samosas a fresh and spicy flavor, while tamarind chutney adds a sweet and tangy taste. Some people like to use both chutneys at the same time. Onion samosas can also be served with tea, making them a popular snack for an afternoon or evening meal.
Food safety is very important when making onion samosas. Before cooking, wash your hands with soap and water and make sure your cutting board, utensils, and cooking surfaces are clean. The FDA recommends keeping food preparation areas clean and preventing cross-contamination between foods. It is also important to be extremely careful around hot oil and never leave hot oil unattended. After cooking, the stove and other kitchen equipment should be turned off and cleaned safely with an adult’s help.
In conclusion, onion samosas are a delicious Indian snack that can be made using simple ingredients such as onions, spices, samosa wrappers, and oil. Making them takes several steps, including preparing the flavorful onion filling, folding the wrappers, sealing the samosas, and frying them until they become crispy and golden. They can be served with mint or tamarind chutney and enjoyed with family and friends. Although making samosas takes some time and care, the crispy outside and flavorful filling make the finished snack worth the effort. Onion samosas are a tasty example of how simple ingredients and Indian spices can be combined to create an amazing dish.
